From Clam Gardens to Craft Beer: Vancouver Island Food Histories and Futures
COURSE
Course description
Vancouver Island has a unique food culture shaped by Indigenous traditions, settler histories, and today’s vibrant local food movement.
This course traces the story of food on the Island, from clam gardens and camas fields to salmon canneries, cideries, and craft breweries.
Explore how geography, history, and culture intersect in what we grow, harvest, and eat—and discover the role of food in shaping community, identity, and sustainability on the Island.
Students will leave with a deeper understanding of how local food culture reflects both resilience and transformation.
