Course description
This course reviews the role of nutrition in older adults and provides an overview of nutritional considerations for various health conditions including heart disease, diabetes, dysphagia, malnutrition and more. Learners discuss texture modification, nutrition support, ethical considerations, and nutrition during the palliative care processes with a person-centred approach. This course focuses on how to prepare safe, appropriate meals for older adults in Canada using legislation and evidence-based practice.
Learning objectives
- analyze the function of macro and micronutrients needs of older adults (over 65 years of age) in Canada using the Canadian Daily Reference Intakes (DRI) database
- examine malnutrition screening and approaches to nutrition interventions for various chronic health conditions observed in older adults in different settings
- evaluate food safety protocols, menu planning, dining practices, and meal services in various care settings using industry standards and legislation
- assess the ethical considerations, including individual rights, consent and autonomy, of nutritional care and support for older adults in palliative and other care settings
- apply person-centred care strategies during the nutrition care process using scenarios and case studies
- assess emerging trends, roles, technology and career pathways in the nutrition industry that serves older adults
